When you hear the word “vegan”, what is your first thought? Many people have asked me if I offer any vegan cupcakes. So after some time and research and lots of baking, I am really excited by the new creations!

My first creation is this delicious and satisfying Lemon Drop Cupcakes. Seriously they are blissful! Just by tasting them, I don’t think anyone would guess that these cupcakes are vegan. They are extremely light and fluffy with an amazing lemony flavor.

Have you ever tried a vegan cupcake? True, I don’t typically practice veganism in my day to day life, but I am a baker who loves nothing more than trying new things. And since there are many who do choose this lifestyle, I love having vegan options in my baking repertoire. As you may guess, though, making a rich and lovely cupcake with no eggs, butter or milk could be a bit of a challenge. The truth is, had I not been the one who made these cupcakes, I would honestly never guess that they were dairy and egg free, because they are perfectly decadent.

I am back in the kitchen and this time I made my delicious version of Carrot Cake Cupcakes. Carrot Cake never goes out of style and one bite of these cupcakes will tell you why. This rich and moist spice cupcake, full of grated carrot and toasted walnuts, has great flavor, especially with the sweet cream cheese frosting.
